A deliciously simple salad inspired by the flavours of the Mediterranean. Creamy goat's cheese, salty dry-cured ham, jammy figs and a sweet balsamic glaze work so well together, especially when tossed together in a hearty rocket salad. Serve as a filling lunch, or as a side at barbecues.

Ingredients

  • 100g rocket
  • 160g prosciutto
  • 8 figs, sliced horizontally
  • 100g soft goat's cheese, crumbled
  • 10g pine nuts
  • 1½ tbsp balsamic vinegar or glaze
  • 3 tbsp extra virgin olive oil
  • 1 lemon, zest

Method

Step 1

Wash the rocket and dry it with a clean tea towel or salad spinner. Lay it out on a large dish.

Step 2

Assemble the prosciutto and figs on top, then crumble over the goat’s cheese and scatter the pine nuts.

Step 3

To make the dressing, mix the balsamic vinegar or glaze with the olive oil and season with salt and pepper.

Step 4

Drizzle it over the salad and sprinkle the lemon zest over just before serving.
