
Goat’s Cheese, Prosciutto, Fig and Balsamic Salad

A deliciously simple salad inspired by the flavours of the Mediterranean. Creamy goat's cheese, salty dry-cured ham, jammy figs and a sweet balsamic glaze work so well together, especially when tossed together in a hearty rocket salad. Serve as a filling lunch, or as a side at barbecues.Time and servings

Ingredients
- 160 g of prosciutto
- 8 figs, sliced horizontally
- 100 g of soft goat's cheese, crumbled
- 1.5 tbsp of balsamic vinegar or glaze
- 10 g of pine nuts
- 100 g of rocket
- 3 tbsp of extra virgin olive oil
- 1 lemon, zest
Method
Step 1
Wash the rocket and dry it with a clean tea towel or salad spinner. Lay it out on a large dish.Step 2
Assemble the prosciutto and figs on top, then crumble over the goat’s cheese and scatter the pine nuts.Step 3
To make the dressing, mix the balsamic vinegar or glaze with the olive oil and season with salt and pepper.Step 4
Drizzle it over the salad and sprinkle the lemon zest over just before serving.
