Halloumi Salad Wraps with Tahini Dressing

  • 250g halloumi
  • 1 handful radishes, thinly sliced
  • ½ cucumber, sliced
  • 1 handful cherry tomatoes
  • 2 tbsp tahini
  • 1 lemon, juiced
  • 1 small clove of garlic, grated
  • 4 tortilla wraps
  • 1 baby gem lettuce


Step 1

Slice the halloumi and place on a griddle or frying pan, over a medium-high heat. Turn when golden.

Step 2

Mix together the radishes, cucumber and tomatoes.

Step 3

To make the dressing, pace the tahini in a bowl with 1-2 tbsp water and stir until it turns into a grainy paste. Add the lemon juice and grated garlic. Season with salt and pepper and mix well.

Step 4

Warm the wraps in a microwave for 30 seconds, spread with a little of the dressing then layer a couple of lettuce leaves on each wrap. Top with the grilled halloumi and vegetables. Fold or roll, then eat right away.
