Celebrate kale with this quick meat-free meal – we’ve used piadina flatbreads because they’re organic, but you can use any.

  • ½ Onion, (Thinly sliced into half moons)
  • 1 Clove Garlic, (grated)
  • 2 tbsp Extra virgin olive oil
  • 100g Organic kale, (leaves finely chopped)
  • 1 tbsp Salsa , (add more if you like it spicy)
  • 2 piadina flatbreads
  • 150g Cheddar, (grated)


Step 1

Sauté onion and garlic in half the oil to soften, add kale and season. Stir until wilted, then add the salsa.

Step 2

Heat a large, dry frying pan and lay a flatbread into it. Work quickly and scatter with cheese, put a handful of the kale mixture into the centre and finish with more cheese.

Step 3

To fold, pull the top edge of the flatbread down over the filling to the centre. Hold that piece down, continue folding clockwise until the filling is covered (about 5 folds), flip over and set aside. Repeat with the second flatbread.

Step 4

Heat the remaining oil in the pan and add the kalesadillas, folded side down. Cook for 4-5 mins until golden. The cheese inside will melt and seal the parcels. Flip to cook the other side. Serve whole or halved.
