  • 1 kiwi, peeled and chopped, plus a slice to decorate
  • 60ml gin
  • 1 tbsp sugar syrup
  • 1½ tbsp lime juice
  • 1 egg white


Step 1

Muddle the kiwi in the bottom of a cocktail shaker, using a cocktail muddler or the end of a wooden spoon.

Step 2

Add a large handful of ice, followed by the gin, sugar syrup, lime juice and egg white. Secure the lid and shake for 20 secs.

Step 3

Strain into a coupe glass (it might take a couple of shakes to get all the liquid out), then decorate with a slice of kiwi and serve straight away.
