Ingredients

  • 500g rolled shoulder of lamb
  • 2 tsp fresh thyme leaves
  • 2 tsp fresh Oregano , roughly chopped
  • 2 cloves garlic, crushed
  • 1 lemon, zest and juice
  • 25ml red wine
  • 50ml olive oil
  • 1 pinch sumac
  • 4 flatbreads
  • ½ cucumber
  • 175g Greek yoghurt
  • 1 clove garlic, crushed
  • 1 tsp mint
  • 1 tbsp olive oil
  • 4 dashes chilli sauce

Recipe tips / Prepare ahead

Place the lamb in a mixing bowl with the herbs, garlic, lemon zest, red wine and half the olive oil. Cover and chill for 2 hrs.

Method

Step 1

Place the lamb in a mixing bowl with the herbs, garlic, lemon zest, red wine and half the olive oil. Cover and chill for 2 hrs.

Step 2

When the lamb has finished marinating, mix the remaining olive oil with the lemon juice and pour over the lamb. Thread onto skewers (allow 2 per person).

Step 3

Grill on a high heat until cooked to your taste. Sprinkle over the sumac.

Step 4

Mix all the tzatziki ingredients (cucumber, greek yoghurt, garlic, mint, olive oil). Serve the salad and lamb on the flatbreads, then top with tzatziki and a splash of chilli sauce.
