Pasta is always a hit and this recipe for linguine with prawns is guaranteed to carry on that trend. A favourite with the Lactofree Team, try serving with a light salad and a crisp white wine.

Ingredients

  • 8 oz linguine
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 cup dry white wine
  • 16 fresh prawns
  • 2 tbsp Lactofree
  • ¼ cup fresh herbs, such as dill or parsley
  • 1 pinch pepper

Method

Step 1

Bring about 6 cups of salted water to a boil in a medium-sized stock pot. Add the linguine and cook until al dente. Drain in a colander and set aside.

Step 2

Heat the olive oil in the stock pot over medium heat. Add the onion and garlic and cook, stirring occasionally until the onions are translucent and fragrant, about 6 minutes. Add the white wine and bring to a boil. Turn down the heat to low and let the mixture simmer until the liquid is reduced by half, about 10 minutes.

Step 3

Once the liquid is reduced, add the prawns, cover the pot and simmer for 5 minutes.

Step 4

Add the pasta back into the pot along with the Lactofree, salt and fresh herbs. Cook until desired heat and consistency, add salt and pepper to taste and serve immediately.
