Pure comfort food, pulled ham hock and butter-fried leeks take mac and cheese to the next level.

Ingredients

  • 350g macaroni
  • 2 leek
  • 180g ham hock, (ready cooked)
  • 280g cream cheese
  • 100ml milk
  • 1 tbsp english mustard
  • 100g gruyere or nutty cheese
  • 50g breadcrumbs
  • 1 tbsp oil
  • 1 knob butter

Method

Step 1

Preheat the grill to medium, and bring a large pan of salted water to the boil and cook the pasta for 8 minutes, or until just tender.

Step 2

Meanwhile, heat 1 tbsp of oil and a knob of butter in a large frying pan, and cook the leeks over a low heat for 5 minutes until wilted and tender.

Step 3

Drain the pasta and add to the pan with the leeks. Stir in the ham hock, cream cheese, milk, mustard and about ¾ of the gruyère until well combined.

Step 4

Season with salt and pepper and spoon into a large ovenproof dish.

Step 5

Sprinkle over the breadcrumbs and the remaining gruyère, and grill for 8–10 minutes until golden and bubbling.

Step 6

Serve with a salad of crisp winter greens.
