Create your own kitchen miracle with this Encanto-themed tray bake. Easy to make with chicken, veg and zingy lime, it’s a fantastical (and magical) way to feed the entire casita. Shop our other Disney-inspired bundles here.

Ingredients

  • 500g baby potatoes
  • 1 tbsp olive or rapeseed oil
  • 2 red peppers
  • 450g boneless chicken thigh fillets
  • 2 limes, zested
  • 4 tsp runny honey
  • 2 corn-on-the-cobs
  • 150g green beans

Method

Step 1

Heat the oven to 200°C/180°C fan/gas 6. Cut the potatoes into 3-4cm chunks. Put the potato chunks in a large roasting tin. Drizzle over the oil then mix together using your hands. Bake for 15 mins.

Step 2

Halve the peppers, remove the seeds and stalks, then chop into chunks. Cut each chicken thigh into 3 pieces. Carefully add the pepper and chicken to the roasted potatoes in the tin, mix together and bake for another 5 mins.

Step 3

Zest 1 lime and juice 1 ½ limes with a juicer. Mix the lime zest, lime juice and honey together. Meanwhile, get an adult to halve each corn cob into mini cobs.

Step 4

Add the mini corn cobs to the roasting tin – watch your fingers, it’ll be hot. Pour over the lime and honey sauce and use a wooden spoon to coat all ingredients in the sauce. Bake again for 20 mins.

Step 5

Trim the ends off the green beans and halve. Bring a small saucepan of water to the boil, add the beans and cook for 2 mins, then drain.

Step 6

Carefully, add the beans to the tin and cook for a final 5 mins. The potatoes should be soft and the chicken cooked – cut into a piece to check. Scoop onto plates and enjoy.
