This is a great one-pot recipe for all the family. It’s the best when you can eat the same things along with your little ones – it makes them feel included and grown up. Plus these tacos do just taste brill! They are suitable for little ones from 10 months and up.

Ingredients

  • 200g Black Beans
  • 162½g Sweetcorn
  • 1 Red or Yellow Pepper, cored and diced
  • 1 Small Tomato
  • 1 Garlic Clove, crushed
  • 80g Piccolo Classic Tomato Stir-In
  • ½ Avocado
  • 1 handful Parsley or Coriander
  • 2 Tortillas
  • 20g Cheddar Cheese, grated

Method

Step 1

Chop your tomato and pepper and add them to a heavy bottomed saucepan along with the garlic, black beans, corn and 80ml of water.

Step 2

Bring to a simmer and cook on a gentle heat for around 15 minutes. Then add the Piccolo Classic Tomato Sauce and heat through.

Step 3

Mash with a fork or leave it as it is to have in your tacos (or it still tastes great by itself)

Step 4

Serve it with a warmed tortilla, avocado, a tsp of chopped up coriander or parsley and the cheddar.
