One Tray Greek Chicken Bake

Crispy, juicy chicken, sweet red romano peppers and red onions (all great-value Ocado Own Range) make up the base of this Greek inspired traybake. We’ve added olive, feta and oregano to crank up those Mediterranean vibes and suggest serving it with tzatziki and flatbreads. Minimal washing up, maximum flavour – you’re welcome.

  • 1 kg British chicken thighs
  • 4 garlic cloves, crushed or grated
  • 2 tbsp dried oregano
  • 1 lemon, zested and cut into wedges
  • 2 tbsp oil
  • 2 red onions, quartered
  • 2 romano peppers, quartered
  • 150g Kalamata olives
  • 100g cherry tomatoes, halved
  • 100g Greek feta cheese
  • 1 large pinch oregano, leaves picked, to serve (optional)
  • 1 tbsp Tzatziki, to serve (optional)
  • 2 flatbreads, to serve (optional)


Step 1

Preheat the oven to 200°C/180°C fan/gas 6. In a large bowl massage together the chicken thighs, crushed garlic, 1 tbsp dried oregano, lemon zest and 1 tbsp olive oil with a pinch of salt and pepper. Leave to marinade, covered in the fridge, for at least 10 mins.

Step 2

Into a large baking tray or dish add the marinated chicken and roast in the oven for 10 mins. Add the onions, peppers and lemon wedges to the chicken and drizzle over the remaining 1 tbsp oil and return to the oven for a further 10 mins. Add the olives, tomatoes and remaining dried oregano to the dish and return to the oven again for a final 10 mins.

Step 3

Top with crumbled feta, fresh oregano (if using) and serve with tzatziki and flatbreads, if you like.
