The Paloma is a fresher, lesser-known cousin to the classic Margarita. This version by Oren Coleman, group bar manager at Ottolenghi’s Rovi restaurant, can be scaled up for a crowd –or make a batch to keep chilled in the fridge.   • 1 lime
  • 1 sprinkle sea salt flakes
  • 50ml Olmeca Altos 100% Agave Plata Tequila
  • 50ml pink grapefruit juice
  • 10ml agave syrup, (optional)
  • 100ml soda water
  • 1 pink grapefruit wedge


Step 1

Slice the lime in half and rub the rim of a tumbler or high ball glass with one half. Juice the other half of the lime; set aside.

Step 2

Dip the lime-rimmed glass in the sea salt flakes.

Step 3

Pour all the liquid ingredients, including the lime juice, into the glass. Leave out the agave syrup if you prefer it more sour.

Step 4

Add ice cubes to fill the glass to the top. Stir to mix, and garnish with a wedge of pink grapefruit.
