A tasty dish of pan-fried cod fillets with parmesan mash and sundried tomato dressing.

Ingredients

  • 4 cod fillets
  • 450g potatoes, cooked and mashed
  • 150g parmesan cheese
  • 100g crème fraîche
  • 2 tbsp olive oil, half for the mash and cooking, half for the dressing
  • 1 pinch salt, to season
  • 1 pinch ground black pepper, to season
  • 1 tbsp plain flour
  • ½ lemon, juice of
  • 2 tbsp sundried tomato paste

Method

Step 1

To the cooked and mashed potatoes add the parmesan cheese, crème fraiche, half of the extra virgin olive oil, seasoning and combine together.

Step 2

Lightly flour and season the cod and cook in olive oil for 3 minutes on each side over a medium heat, taking care not to burn the flour.

Step 3

Mix the sundried tomato paste with the remaining olive oil and the lemon juice.

Step 4

Place the mash in the centre of the plate, sit the cod on top and drizzle the sundried tomato dressing around the mashed potatoes.
