Perfect finger food for a buffet or with drinks. For an ideal accompaniment, serve with tzatziki.

  • 80g plain flour
  • 1 tsp baking powder
  • 1 medium egg, beaten
  • 100ml milk
  • 75g petit pois, defrosted
  • 75g courgette, grated
  • 100g feta cheese, crumbled
  • 1 tsp dill, roughly chopped
  • 1 tsp parsley, roughy chopped
  • 2 spring onions, finely sliced
  • 5 tbsp sunflower or light olive oil, for frying


Step 1

Whisk together the flour and baking powder in a large mixing bowl and season with salt and pepper.

Step 2

Make a well in the centre and pour in the egg and about half of the milk.

Step 3

Whisk, gradually drawing the dry ingredients into the egg and milk to make a batter. If the batter is too thick, whisk in more of the milk until the batter is the consistency of double cream.

Step 4

Stir in peas, courgette, feta, herbs and spring onions.

Step 5

Heat a non-stick frying pan over a medium heat, add about 2 tsp of oil and, when hot, drop in 1 tbsp batter. Fry on each side for 2-3 mins, until golden.

Step 6

Repeat with the remaining batter. The fritters can be kept warm in the oven for up to 30 mins before serving.
