This sophisticated salad can be enjoyed as a light meal, starter or side dish. The sweet pears contrast deliciously with the rich, creamy blue cheese.

Ingredients

  • 50g pecan nuts
  • 4 tablespoon olive oil
  • 2 tablespoon cider vinegar
  • 1 teaspoon Dijon mustard
  • 4 slices white bread
  • 150g salad leaves
  • 4 pears, cored and sliced
  • 125g blue cheese

Method

Step 1

Toast the pecans in a dry pan for 5 minutes. Set aside to cool.

Step 2

Whisk together the oil, vinegar and mustard, and season to taste.

Step 3

Toast or grill the bread, then place a slice in each plate. Pile with the salad leaves and pear, then drizzle over the dressing. Finally, crumble on the cheese and top with the nuts.
