This pizza toast recipe is by TikTok creator @lockdowncuisine and is ready to enjoy in less than 20 minutes. Ripe fresh tomatoes and a rich Napoletana sauce, a crisp base in the form of toasted sourdough, oozy melted burrata, fragrant basil and a surprising sweet tang from red onion marmalade – it’s an addictive combination you’ll return to over and over again. As with any pizza, feel free to add your preferred toppings such as spicy salami, olives or sliced mushrooms.

  • 1 tsp olive oil, plus extra for the tomatoes
  • 2 slices of sourdough bread
  • 3 tomatoes, sliced into rounds
  • 1 lemon, juiced
  • 2 balls of burrata
  • 2 tbsp parmesan , grated
  • 4 tbsp Napoletana sauce
  • 2 tsp red onion chutney
  • 1 basil sprig


Step 1

Preheat the oven to 200°C/180°C fan/gas 6.

Step 2

Heat the oil in a large frying pan over medium-high heat and fry the bread slices on each side until golden.

Step 3

Season the tomato slices with the lemon juice, a pinch of salt and coarsely ground black pepper, and a drizzle of olive oil.

Step 4

Tear the burrata into bite-size pieces and arrange them on the toasted bread. Layer the tomatoes on top and sprinkle with 1 tbsp of the parmesan cheese.

Step 5

Transfer to a baking tray lined with baking paper and bake in the oven for 5-7 mins until the cheese begins to colour and melt.

Step 6

Meanwhile, in a small pan, heat the napoletana sauce until just simmering.

Step 7

Spoon the sauce over the toast, then dollop over the red onion chutney, scatter over a few basil leaves and sprinkle over the remaining parmesan. Bake in the oven for another 3 mins and serve immediately.
