These vegan Plenish Oat Milk savoury crêpes aren’t just for breakfast. Oh no, they can be enjoyed at any time of the day and this totally plant-based recipe skips the eggs too. They’re extremely easy to make, with just four ingredients for the actual crêpes and another four toppings. Perfect for a light meal, whenever you fancy.

Ingredients

  • 225g plain flour
  • 170ml Plenish Oat Milk
  • 1 tsp vanilla essence
  • 1 tbsp coconut oil
  • 1 handful sliced mushrooms
  • 1 garlic clove
  • 1 handful of chives
  • 1 red pepper

Method

Step 1

Add the flour and a pinch of salt to a large bowl and stir to combine.

Step 2

Add the Plenish Oat Milk and whisk until smooth, add the vanilla and coconut oil, and whisk again. Leave the mixture for 5 mins.

Step 3

Heat a lightly oiled non-stick frying pan (or crêpe pan) over medium heat.

Step 4

Pour the batter into the pan, then tip and rotate the pan to spread the batter as thinly as possible.

Step 5

Cook for 1–2 mins on each side.

Step 6

Serve with fried mushrooms, garlic, chives and peppers.
