A crunchy chopped salad that uses up your leftover roast chicken.

  • 1 roasted chicken leg
  • 1 shallot, finely sliced
  • ½ small garlic clove, crushed
  • 1 lemon
  • ½ tbsp olive oil
  • 1 pitta bread
  • 75g cherry tomatoes, quartered
  • ¼ cucumber, deseeded and sliced
  • 4 radishes, sliced
  • 1 little gem lettuce, shredded
  • 1 handful parsley, leaves chopped
  • 1 handful mint, leaves chopped
  • 1 pinch sumac


Step 1

Preheat grill to medium.

Step 2

Shred the chicken leg using two forks.

Step 3

Put the shallot in a small bowl and add the garlic, lemon juice and oil. Season well and set aside.

Step 4

Grill the pitta bread until lightly golden and crisp. Once cool, tear into pieces.

Step 5

Toss the tomatoes with the cucumber, radishes, little gem, herbs and pitta and add the chicken. Pour over the dressing and sprinkle over the sumac to serve.
