Ingredients

  • ½ bunch coriander
  • 1 clove garlic
  • 1 dash butter
  • 1 handful flat leaf parsley
  • 1 pinch salt
  • 2 tsp chopped garlic
  • 2 tbsp light soy sauce
  • 1 tbsp pure clear honey
  • 1 tsp root ginger
  • 8 sweet potatoes
  • 2 tbsp mild & light olive oil
  • 4 salmon fillets

Method

Step 1

Pre-heat your oven to 200ºC. Mix all the ingredients apart from the salmon together in a bowl. Add the salmon fillets and leave to marinade for 30 minutes.

Step 2

Meanwhile, peel and chop the sweet potatoes and place in boiling water, for approximately 7 minutes. While the sweet potato is cooking, transfer the marinated salmon to a baking dish and pop into the hot oven for approximately 10 minutes.

Step 3

Drain potatoes, add the butter, olive oil, crushed garlic, seasoning and mash together. Then stir in the finely chopped parsley. Serve the salmon on top of the potato with a drizzle of the marinade round the edge to finish.

Step 4

Tip: you could also serve the salmon with stir-fry vegetables, or over rice or quinoa.
