  • 8 sausages
  • 3 tbsp breadcrumbs
  • 25ml olive oil, 10ml for the breadcrumbs and 25ml for frying
  • ¼ tsp paprika
  • 1 cup frozen spinach, thawed
  • 1¾ cups milk
  • 3 tbsp flour
  • 3 cups cheddar cheese, grated (or use vegan cheese)
  • 1 tsp ground nutmeg
  • 2 sprigs rosemary
  • 2 cups macaroni


Step 1

Preheat oven at 180 C.

Step 2

Mix breadcrumbs, oil and paprika in a small bowl and set aside.

Step 3

Drain spinach and set aside. Ensure that excess moisture is drained out.

Step 4

Heat 1½ cups of milk in a thick based pot over medium heat and allow to steam.

Step 5

Whisk remaining ¼ cup milk and flour in a small bowl until smooth and add to the hot milk. Cook for 2-3 minutes and whisk repeatedly. Remove from heat and stir in cheddar cheese until melted.

Step 6

Add in nutmeg, rosemary, salt and pepper.

Step 7

Cook pasta for 5 minutes.

Step 8

Drain and add to cheese sauce. Mix well.
