Scandinavians know how to do fish and they know how to do rye. Dark, rich, nutty rye breads are best as open sandwiches and will really show off your ingredients.

  • ½ avocado, thinly sliced
  • 1 tsp capers
  • 1 tbsp chives, finely chopped
  • 1 tbsp seafood sauce
  • 2 slices rye bread
  • 2 slices smoked salmon, thinly cut


Step 1

Use salmon as your base on one slice of bread. Layer the avocado, capers, chives and seafood sauce (you could also add baby gem lettuce) and serve with a squeeze of lemon juice.
