If gammon is part of your festive line-up, chances are you’ll have some leftover after the big day. This soup is a lovely warming way to use it. Filled with greens and beans, it's not only hearty but nutritious too – making it an ideal post-celebration meal if you've indulged in lots of treats. You can rustle it up in just 25 minutes.

Ingredients

  • 1 onion, finely sliced
  • 1 drizzle olive oil
  • 4 garlic cloves, grated
  • 1½ tbsp roasting herbs (such as sage, thyme or rosemary), finely chopped
  • 2 400g tins cannellini beans, drained and rinsed
  • 1½ litres chicken stock
  • 200g cooked gammon, shredded
  • 150g green vegetables (such as kale, cabbage, spring greens, spinach), roughly chopped
  • 1 squeeze lemon
  • 1 heaped tbsp parmesan

Method

Step 1

Put the onion in a large saucepan over a medium heat with a drizzle of oil, until soft and slightly golden.

Step 2

Add the garlic and herbs. Season and add in one tin of beans. Mash slightly and add in the other tin and the stock. Simmer for 10 mins.

Step 3

Add the ham and greens and cook for 2-3 mins.

Step 4

Squeeze in some lemon juice, top with parmesan and serve.
