  • 750g new potatoes
  • 6 sundried tomatoes, chopped
  • 1 tbsp capers
  • 1 tbsp pitted black olives, drained and chopped
  • 1 lemon, zested (plus a little of the juice)
  • 1 handful fresh parsley
  • 1 handful fresh basil
  • 1 pinch chilli flakes
  • 4½ tbsp extra virgin olive oil


Step 1

Cook the new potatoes in boiling water until tender (about 10 mins).

Step 2

Meanwhile mix dressing ingredients together and season.

Step 3

When the potatoes are done, drain and tip back in the pan, halving any large ones.

Step 4

Pour the dressing over while potatoes are still warm, mix well and serve.
