Smacked cucumber salad is as simple (and intriguing) as it sounds. Cucumber pickles are popular in a variety of Asian cuisines because they’re the perfect side dish to add extra ‘crunch’ and flavour to a meal. Smashed cucumber is doused with a quick, spicy pickling liquor made from rice vinegar, chilli oil, soy sauce, fish sauce, chilli flakes and sesame seeds. Once marinated for a couple of hours it’s ready to enjoy alongside your favourite Asian main course, such as this delicious caramelised pork belly with rice noodles recipe.

Ingredients

  • 4 tbsp rice vinegar
  • 3 tbsp caster sugar
  • 2 tbsp soy sauce
  • 1 tsp fish sauce
  • 2 tbsp chilli oil
  • 2 tsp sesame seeds
  • 1 pinch chilli flakes
  • 2 cucumbers, approx. 450g each, ends trimmed

Method

Step 1

In a medium bowl, combine the rice vinegar, caster sugar, soy sauce, fish sauce, chilli oil, sesame seeds and chilli flakes.

Step 2

Wash the cucumbers under cold water and pat dry. Use a rolling pin to smack the cucumbers on a chopping board until they split. Cut the cucumber into bite-sized pieces (approx. 2-3cm) and transfer them from the cutting board to the bowl of marinade. Stir to combine well and season with salt, to taste, if needed. Cover and marinate for a minimum of 30 mins but up to 3 days for a more intense flavour. Stir regularly during the marinating time to ensure an even coating.
