This Smoked Salmon and Avocado Flatbread with Red Onion Pickle and Chilli is a delicious global mash-up of fresh Scandi and Mexican flavours with a chewy Greek-style flatbread base. It’s super-quick to rustle up and is fabulous sliced and served as part of a sharing board with other deli bits – or you can enjoy one all to yourself.

Ingredients

  • 2 greek-style flatbreads
  • 1 ripe avocado
  • 100g smoked salmon
  • 2 tbsp pickled red onion (approx.)
  • 1 mild red chilli, finely sliced

Method

Step 1

Heat the flatbreads as per the pack instructions, then leave to cool slightly.

Step 2

Peel the avocado, remove the stone and mash the flesh with a fork.

Step 3

Scoop it on to the 2 flatbreads, spreading it out, then top with the smoked salmon, pickled red onion and a scattering of sliced chilli.

Step 4

Cut into bite-size pieces and serve on a platter.
