Quick and easy to make, this simple supper is packed with bold flavours and can be ready in just 20 minutes. Homemade white beans are given a spicy makeover with red onion, chilli, paprika and coriander, then simmered in passata and poured over your choice of toast. Ingredients

  • 1 red onion, finely chopped
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 chilli, chopped
  • 400g passata
  • 800g white beans, rinsed and drained
  • 1 handful coriander, chopped
  • 4 slices sourdough bread

Method

Step 1

Soften the red onion in the olive oil for a few mins. Add the smoked paprika and chopped chilli and cook for 1 min then add the passata.

Step 2

Simmer for 5 mins then stir in two tins of white beans and cook for 5 mins. Stir in a handful of coriander.

Step 3

Toast some bread, pile on the beans and serve.
