The hot horseradish is the perfect partner to succulent cod fillets in this simple and elegant dish.

Ingredients

  • 4 Cod Fillets
  • 800g fresh spinach, blanched
  • 2 tbsp crème fraiche
  • 100g unsalted butter
  • ½ onion, finely diced
  • 2 tbsp horseradish sauce
  • 8 tbsp coarse breadcrumbs

Method

Step 1

Place the cod in a oven proof dish.

Step 2

Season the spinach and place on top of the cod.

Step 3

Place half tablespoon of the crème fraiche on top of the spinach.

Step 4

In a pan melt the butter and cook the onion until soft, stirring occasionally. Add the horseradish, season and add the breadcrumb.

Step 5

Mix well together and sprinkle on top of the fish. Cook in a preheated oven 190ºC/375ºF/gas mark 5 for about 30-35 minutes.
