  • 6 St Pierre brioche burger buns, sliced
  • 2 skinless chicken breasts
  • 2 cups plain white flour
  • 300ml buttermilk
  • 2 tbsp vegetable oil
  • 1 clove garlic, crushed (for the spicy mayo)
  • 200g mayonnaise, (for the spicy mayo)
  • 1 tbsp hot pepper sauce, (for the spicy mayo)
  • ½ red onion, finely diced, small (for the spicy mayo)
  • 4 tbsp cornichons, finely diced, to taste (for the spicy mayo)
  • 1 iceberg lettuce, finely sliced

Step 1

Dredge halved chicken breasts in flour, dip in buttermilk and then dredge again in flour.

Step 2

Pour oil into a large heavy frying enough to cover chicken breasts. Heat over medium heat until oil is hot (test with a small piece of bread - when bread bubbles and turns golden brown the oil is ready). Fry the chicken, in batches, until golden brown and cooked through, about 4 to 5 minutes per side. Transfer to a wire rack to cool.

Step 3

Prepare spicy mayo by mixing crushed garlic with mayo, and adding hot pepper sauce. Add finely diced red onions and cornichons and mix well.

Step 4

Spread the brioche burger buns with spicy mayo, top with fried chicken and finish with finely sliced iceberg lettuce.
