Over the years vegetables have been crossing over more and more from our dinner plates to our baked teatime treats; like this delicious courgette loaf.

  • 150g brown sugar
  • 150g butter , softened
  • 3 medium eggs, beaten
  • 175g self raising flour
  • 1 tsp baking powder
  • 200g courgette , coarsely grated
  • 2 tbsp milk
  • 3 limes , zested and juiced, plus one extra, zested for the syrup (optional)
  • 40g caster sugar

Recipe tips / Prepare ahead

Preheat the oven to 180C/Gas4. Grease and line a 2lb (23 x 13 x 7cm) loaf tin.


Step 1

Beat the butter and sugar together until soft and creamy. Add the eggs a little at a time, beating well between each addition. Sift the flour and baking powder together and then mix into the egg mixture followed by the courgettes, milk and zest of three limes.

Step 2

Spoon into the loaf tin, level the top and then bake in the pre-heated oven for 50-55 minutes, until a skewer comes out clean when inserted in the centre of the loaf.

Step 3

While the loaf is cooking, place the juice of three limes and the caster sugar in a pan and heat, stirring, until the sugar has dissolved. Increase the heat and boil for about 3-4 minutes until reduced and syrupy. Remove from the heat.

Step 4

When the cake comes out of the oven, pierce the top all over with a skewer. Stir the remaining lime zest, if using, into the warm lime syrup and then spoon over the top of the cake.

Step 5

Leave to cool, then turn out of the tin and serve in slices.
