Strawberry and brownie trifles

Serves 4
Ingredients
- 20g custard powder
- 1 tbsp caster sugar
- 250ml milk
- ½ tsp vanilla essence
- 4 chocolate brownie slices
- 450g strawberries
- 250ml double cream
- 1 sprinkling of grated dark chocolate, to garnish

Instructions
- Mix the custard powder, caster sugar and 1-2 tbsp of milk to form a paste. Heat the remaining milk to simmering point, remove from the heat and stir in the paste.
- Return to the heat and stir until thickened and smooth. Turn off the heat, add the vanilla essence, then cover with damp greaseproof paper.
- Crumble the brownies between four glasses or small bowls. Chop then mash half the strawberries. Slice the remainder and stir through.
- Top the brownies with the strawberries then add the cooled custard and whipped cream. Garnish with the grated chocolate and chill until ready to serve. (Serve within 3-4 hours of making.)
