Mess free and fuss free, these mini frittatas are the perfect hand-held snack. Any soft herbs will work here, so just choose your favourite ones! Whether you're looking for inspired lunchbox recipes, something to pack in a picnic basket or finger food for a party, these little numbers are just the thing.

  • 1 drizzle olive oil, for greasing
  • 4 large eggs, beaten
  • 1 clove garlic, grated
  • 1 handful basil, finely chopped
  • 1 handful chives, finely chopped
  • 1 handful parsley, finely chopped
  • 90g ham hock
  • 1 handful grated cheddar or parmesan (optional)


Step 1

Preheat oven to 190°C/170°C fan/gas 5 and grease 6 holes of a muffin tin, or use paper cases.

Step 2

Beat the eggs in a large bowl and add the garlic, chopped herbs, ham hock and cheese (if using). Season with salt and pepper and mix well.

Step 3

Divide the mixture evenly between the prepared muffin holes.

Step 4

Bake for 12 mins, until the frittatas are set and golden. Take out of the oven and leave to cool slightly before removing from the tin. Once cool, store in a plastic container in the fridge until you’re ready to hit the road.
