Have a tin of sweetcorn lurking in your cupboards? Then use it to make these quick and easy fritters by Tastemade. Just add spring onion, flour, milk and eggs, and you've got yourself a great lunch or afternoon snack. Serve with sour cream for dipping.

Ingredients

  • 1 190g tin sweetcorn, drained
  • 3 spring onions, finely sliced
  • 1 small bunch coriander, leaves and stalks separated
  • 2 eggs, beaten
  • 25g milk
  • 75g self-raising flour
  • 200ml vegetable oil, for frying
  • 1 lime, cut into wedges, to serve
  • 4 tbsp sour cream, to serve

Method

Step 1

In a bowl, mix together the sweetcorn and 2 of the sliced spring onions. Finely chop the stalks of the coriander (save the leaves for later) and add this to the bowl too.

Step 2

In a small jug, beat together the eggs and milk, then add to the sweetcorn. Add the flour and baking powder, season well and mix everything together.

Step 3

Heat your frying pan to a medium heat, then add enough oil to cover the base by 2mm. Drop 2 tbsp mounds into the hot oil and fry for 2 mins before flipping and cooking the other side for another min or so.

Step 4

Remove from the pan and allow to drain on some kitchen paper while you continue to fry in batches until all the batter is used up.

Step 5

Serve with the remaining sliced spring onions, lime wedges and sour cream.
