The sweet taste of pineapple with a fiery kick makes a stunning dessert for an Asian feast.

  • 2 leaves basil
  • 50g caster sugar
  • 1 red chillies, chopped into fine slivers
  • 1 super sweet pineapple
  • 2 limes


Step 1

In a small saucepan heat together the water and sugar until dissolved. Remove from the heat and leave to cool. Add the chilli to the liquid.

Step 2

Meanwhile peel and cut the pineapple into large chunks and add to the bowl with the lime juice.

Step 3

Place the salad in the fridge for a couple of hours to let the flavours infuse. Then just before serving, add torn basil leaves (trust us, it really works!).
