Turkey & Spring Onion Noodle Soup

Ingredients
- 600ml vegetable stock
- 1 carrot, peeled and cut into thin matchsticks
- 100g medium egg noodles
- ½ bunch spring onions
- 100g cooked turkey
- 100g frozen peas
Method
Step 1
Bring the stock to the boil and add the carrot.
Step 2
Boil for 4-5 mins, then add the noodles and turn down to simmer for 3 mins.
Step 3
Slice up the spring onions.
Step 4
Add the turkey, frozen peas and spring onions into the stock, retaining a few of the green parts of the onions for garnish. Heat for 1 min or so until everything is hot.
Step 5
Pour into two bowls, and top with the remaining spring onions to serve.
