Make the quintessential roast dinner or Christmas dinner side dish with our Ultimate Roast Potatoes recipe. Featuring golden, crispy potatoes that are light and fluffy in the middle. Heaven with lashings of rich gravy. As a dry and floury variety of potato, Maris Pipers are excellent for roasting, mashed potato and making crispy chips. We’ve cooked our potatoes in simple olive oil here, but you could swap this for goose or duck fat. Just make sure your oil is very hot to seal the potatoes. If it’s not hot enough the potatoes will just absorb the fat and be greasy.

  • 6 tbsp olive oil
  • 2 kg maris piper potatoes
  • 1 pinch sea salt


Step 1

Preheat oven to 220°C/200°C fan/gas 7 and place the olive oil into a large roasting tin.

Step 2

Peel the potatoes and cut into even chunks, so they cook at the same time, about 5cm in size.

Step 3

Place in a large saucepan, cover with cold water and a good pinch of salt. Place on a medium-high heat and bring to the boil. Reduce to a simmer and cook for 10 mins. Starting with cold water will help your roasties be fluffy on the inside and crispy on the outside later.

Step 4

Put the oil-filled roasting tin into the oven to heat up.

Step 5

Drain the potatoes into a large colander and give them a good shake to fluff up the edges. Allow to steam dry for a few mins.

Step 6

Once the oil in the oven is very hot (you should be able to hear it popping slightly), carefully tip the potatoes into the tray. Spoon the hot oil all over the potatoes, you want every bit to be coated. Add a little more oil if necessary.

Step 7

Place the tin into the oven for 20 mins. Remove and turn the potatoes and return for another 20 mins and repeat one more time.

Step 8

After an hour in the oven they should be a lovely deep golden brown, super crispy on the outside and fluffy on the inside. Sprinkle with a little salt and serve with The Jolly Hog Pigs in Blankets 240g £4 (£1.67 per 100g).
