For easy-peasy baking, try these simple buns. Sharp-flavoured fruit goes sticky and sweet when cooked – delicious topped with a simple mascarpone frosting.

Ingredients

  • 300g mixed berries
  • 125g butter (at room temperature)
  • 125g caster sugar
  • 2 large eggs, beaten
  • 2 tsp vanilla essence
  • 125g self-raising flour, sifted
  • 2 tbsp milk
  • 200g mascarpone
  • 2 heaped tsp icing sugar

Recipe tips / Prepare ahead

Preheat oven to 180˚C/Gas 4.

Method

Step 1

Line a muffin tray with 12 muffin cases. Divide the berries between the cases, reserving 6 of each type for decoration.

Step 2

Cream the butter and sugar until light and smooth. Add the eggs a little at a time, beating well, then add 1 tsp vanilla essence. Fold in the flour, then the milk. Stir until smooth.

Step 3

Divide the mixture between the cases and bake for 15-20 minutes until golden and springy to touch. Remove from the tin and cool on a wire rack. Once cool, remove from the cases and flip berry side up.

Step 4

Beat the mascarpone with the icing sugar and remaining vanilla. Top each bun with the mascarpone mixture and a berry. Voila!
