Lusciously chocolatey, these cupcakes make an indulgent sweet treat for that special someone.

Ingredients

  • 50g dark chocolate
  • 75g butter
  • 100g caster sugar
  • 40g plain flour
  • 1 tbsp cocoa powder
  • ½ tsp baking powder
  • 25g unsalted butter, at room temperature
  • 150g icing sugar, sifted
  • 75g cream cheese
  • 2 drops red food colouring
  • 2 eggs

Method

Step 1

Preheat oven to 190˚C/Gas 5

Step 2

Set a bowl over a pan of gently simmering water. Add the butter and chocolate to melt, then stir in the sugar. Remove the bowl from the pan, cool for 5 mins, then add the eggs one at a time as you whisk thoroughly.

Step 3

Sift the flour, cocoa and baking powder together and fold into the mix. Divide between 8 cases and bake for 20-25 mins until risen and springy to touch. Cool on a wire rack.

Step 4

To decorate, beat together the butter and half the icing sugar. Stir in the cream cheese and the remaining sugar, then beat well as you add the colouring. Pipe on to the cakes and finish with sprinkles.
