Start your day with this tasty mixed-grain and nut granola, topped with coconut yoghurt, mango and passion fruit. It’s remarkably easy to make. All you need is a mixing bowl and baking tray lined with baking paper. The basic elements of all granolas are oats, nuts and seeds, and a sweetening syrup of some sort. The beauty of it is that you can add and subtract ingredients as you please. We’ve kept it pretty simple by adding buckwheat, mixed seeds, mixed nuts, and dried fruit to the oats. It’s also vegan courtesy of using maple syrup (rather than honey) and coconut yoghurt. A breakfast for vegampions.

  • 250g jumbo oats
  • 100g buckwheat
  • 100g mixed seeds
  • 100g mixed nuts
  • 100g dried fruit
  • 70ml maple syrup
  • 70g coconut oil, melted
  • 200ml coconut yoghurt
  • 1 mango, cut into chunks
  • 2 passion fruits, halved, pup scooped out
  • 1 handful toasted coconut flakes


Step 1

Preheat the oven to 180°C/160°C fan/gas 4. Line an oven tray with parchment paper. Combine all the granola ingredients in a large bowl, stirring well, then tip into the lined tray and spread it evenly.

Step 2

Bake for 10 minutes, give the mixture a good stir, then bake for a further 10 minutes until golden. Leave to cool then transfer to an airtight container.

Step 3

To serve, spoon the yoghurt into 2 bowls, top with some granola and the mango, then spoon the passion fruit pulp over the top. Scatter with toasted coconut and enjoy.
