This scrumptious sauce is a vegan take on the classic bolognese recipe.   I dare you to try it and not fall in love with its hearty, delicious flavour!

Ingredients

  • 1 pack Meat Free Mince
  • 30g margarine
  • 1 large onion, skinned and chopped
  • 2 carrots, peeled and chopped
  • 2 sticks celery, scrubbed and chopped
  • 2 tbsp tomato paste
  • 250ml tomato puree
  • 550ml vegetable stock
  • 5ml basil, plus a sprinkle to garnish
  • 500g cooked spaghetti
  • 1 pack peppers, to garnish

Method

Step 1

Make the sauce first.

Step 2

Fry the onion, carrot and celery until lightly browned.

Step 3

Add the tomato paste, tomato puree and basil and allow to simmer for a few minutes before adding the stock, salt and pepper.

Step 4

Cover and simmer for 10-15 minutes.

Step 5

Cook mince separately according to the instructions on the box and then add to the tomato mix.

Step 6

Re-season if necessary.

Step 7

Serve on top of spaghetti with basil.
