The saltiness of blue cheese contrasts well with the peppery freshness of watercress.

  • 100g watercress, washed, coarse stems removed and very roughly chopped
  • 75g blue cheese
  • 8 eggs
  • 20g butter
  • 3 tbsp milk
  • 4 spring onions, chopped


Step 1

Preheat grill to a medium heat. In a large bowl, beat the eggs and milk, and season well.

Step 2

Melt the butter in a non-stick frying pan over a gentle heat. Add the spring onions and fry gently for 2 mins, then add the watercress and continue to cook for another 1 min.

Step 3

Carefully pour in the egg mixture. Crumble over the blue cheese and turn the temperature up to medium and cook for 4-5 mins or until the base is set.

Step 4

Transfer the pan to under the grill and cook for a further 4-5 mins, or until the top is set and has started to turn golden.

Step 5

Leave to cool in the pan for a few mins, then turn out on to a board. Chop into slices and serve with a mixed leaf salad.
