Wonderfully refreshing, the watermelon-lemon base makes a great cocktail too – just add gin and tonic water instead of soda.

  • ½ watermelon, skin removed and cut into chunks (approx. 800g prepared weight), plus slices
  • 2 lemons, juiced
  • 50g granulated sugar
  • 1 handful mint leaves
  • 300ml soda water
  • 1 handful ice cubes, to serve


Step 1

Place the watermelon chunks into a blender along with the lemon juice and sugar. Blitz for 2-3 mins, until smooth.

Step 2

Sieve into a serving jug and add most of the mint leaves.

Step 3

When you’re ready to serve, add the soda water to the jug and stir to mix. Serve in tumblers over ice, garnished with melon slices and mint leaves.
