
White Chocolate Rocky Road Cake

This white chocolate rocky road fridge cake couldn’t be simpler to make. It’s everything you love about rocky road but in cake form – and no oven required! Crunchy biscuit pieces, moreish marshmallows and chunks of chocolate… is your mouth watering yet? It’s an ideal dessert for a summer barbecue or birthday bash – make it the day before so you can relax and enjoy your time on the big day.Time and servings

Ingredients
- 85 g of salted butter
- 2 tbsp of golden syrup
- 110 g of white chocolate or chocolate chips
- 1 tbsp of cocoa powder
- 200 g of digestive biscuits
- 50 g of mini marshmallows
- 50 g of dried cranberries
- 100 g of maltesers
Method
Step 1
Line a 450g loaf tin with cling film.Step 2
In a small saucepan, melt the butter with the syrup and white chocolate, then stir in the cocoa powder and remove from the heat.Step 3
Crush the biscuits and the Maltesers into small pieces then add them to the chocolate mixture and stir to combine well. Stir in the marshmallows and dried cranberries.Step 4
Press the mixture into the prepared loaf tin and place in the fridge to set (approx. 2 hours or preferably overnight). When ready, invert the tin onto a serving platter, peel off the cling film then slice and enjoy.
