Wild Mushroom and Nduja Salami Pasta

Nutty, earthy girolles are the perfect match for traditional, soft, smoky, Italian salami. This pasta dish is layered with flavour and couldn't be easier (or quicker!) to rustle up. We used casarecce pasta because we love the way the spicy, garlicky sauce clings to it, but you can use any shape you have in the cupboard.

Ingredients

  • 300g pasta
  • 300g mushrooms
  • 3 tbsp butter
  • 2 cloves garlic, sliced
  • 150g nduja
  • 1 handful parmesan, grated
  • 1 handful basil leaves, shredded

Method

Step 1

Bring a pan of water to the boil and cook the pasta according to the pack instructions.

Step 2

Heat the butter in a frying pan and cook the girolles over a medium heat for 5-10 mins until softened (tear up any larger ones). Stir in the garlic and cook for 2 mins, then add the nduja with a splash of the pasta water to make the sauce.

Step 3

When it's ready, drain the pasta, reserving some of the cooking liquid. Add the pasta to the pan with the spicy mushroom mixture and toss together, adding a little more of the pasta water if needed. Divide between bowls and top with parmesan and basil.
