Sweet figs and salty, savoury halloumi are a natural match, while za’atar –a Middle Eastern spice blend –adds a nutty, zingy flavour that turns a quick and easy dish something extra special.

Ingredients

  • 1 red onion, thinly sliced
  • 1 lemon, juiced
  • 1 pinch chilli flakes
  • ½ tsp salt
  • 1 pack halloumi, thickly sliced
  • 1 tbsp honey
  • 3 tbsp olive oil
  • ½ tbsp za’atar
  • 8 ripe figs, halved
  • ¼ small bunch of mint, leaves only
  • 100g rocket
  • 30g pistachios, chopped

Method

Step 1

Preheat the oven to 220°C/200°C fan/gas 7. Place the onion in a bowl with the lemon juice, chilli flakes and salt; set aside to lightly pickle.

Step 2

Line a roasting tin with baking paper. Add the halloumi, drizzle with the honey and 1tbsp of the olive oil and sprinkle over the za’atar. Roast in the oven for 10 mins, then turn the halloumi slices and nestle in the figs, cut-side down. Roast for 10 mins more, until crispy and golden.

Step 3

Drain the pickled onions, then toss in a bowl with the mint, rocket and remaining 2tbsp olive oil; season to taste. Spread out on a serving plate, add the halloumi and figs and scatter over the chopped pistachios.
