Halloumi with Garlic, Chilli, and Coriander

Cook's Notes

Because halloumi cheese doesn't melt, it is great for cooking on a barbecue or cast-iron grill pan. Looking for more halloumi recipes? Look no further.

    Heat the oil in a shallow frying pan, add the chillies, and cook over a medium heat for 2 minutes. Add the garlic, cook for 1 minute, then remove from the heat. Using a slotted spoon, transfer the garlic and chilli to a plate and put to one side.

    Return the frying pan to the heat (there’s no need to clean it), and carefully add the halloumi. Fry for 3 minutes on each side, or until golden brown. Add the coriander, and the chilli and garlic mixture, and season well with salt and black pepper. Toss together and cook for a further 2 minutes. Serve with fresh crusty bread or a tomato salad.

  • 3 tbsp olive oil
  • 2 red chillies, deseeded and finely sliced
  • 4 garlic cloves, finely sliced
  • 250g halloumi cheese, cut into 5mm ( 1 / 4 in) slices
  • 1 handful fresh coriander, chopped
