Grains with Roasted Peppers & Goat's Cheese

This colourful, wholesome recipe combines pantry and fridge essentials with nutritious grains for an easy Mediterranean-inspired dish. Plus it's ready and on the table in less than 10 minutes - perfect for a quick midweek dinner with the family, or even as wholesome lunch.


Instructions

    Place half the pouch of grains in a bowl (save the other half for tomorrow’s lunch). Dress with the lemon and olive oil.

    Add the roasted red peppers, pitted black olives, cherry tomatoes, parsley and crumble over the goat’s cheese.

    Gently mix it all together, season to taste and tuck in. If you’re extra hungry, serve with pitta triangles.

  • 250g microwaveable grains, of your choice
  • 1 squeeze lemon
  • 1 dash olive oil
  • 2 tbsp roasted red peppers, chopped (from a jar)
  • 2 tbsp pitted black olives
  • 5 cherry tomatoes, halved
  • 1 handful fresh parsley, leaves only
  • 50g goat's cheese
