Argentinian Steak and Chimichurri Salad

Our twist on chimichurri, a fresh and zippy herb-packed sauce from Argentina. Looking for more salad recipes? Look no further.


Instructions

    Make the chimichurri: in a small food processor, whizz all the sauce ingredients together, taste, season and add more chilli or cumin to taste.

    Heat the oil in a frying pan and cook the steaks for 2-3 mins on each side, depending on how you like yours.

    Toss together the red onion, beans, sweetcorn, peppers and avocado, then stir in the chimichurri. Slice the steak and serve on top of the salad.


Ingredients

  • 1 tbsp olive oil
  • 4 sirloin steaks, fat trimmed if preferred
  • 1 red onion, diced
  • 1 tin black beans, drained and rinsed
  • 340g sweetcorndrained and rinsed
  • 290g red peppersdrained and roughly chopped
  • 1 large avocado, chopped
  • 56g parsley, for the chimichurri
  • 28g coriander, for the chimichurri
  • 2 garlic cloves, for the chimichurri
  • 1 tsp ground cumin, for the chimichurri
  • 1 tsp chilli powder, for the chimichurri
  • 3 tbsp red wine vinegar, for the chimichurri
  • .6 tbsp olive oil, for the chimichurri
