In a small mixing bowl, combine the mayo, ketchup, Tabasco and sherry.

Season the sauce to taste with the lemon juice and a pinch of salt and coarse ground black pepper.

Divide the shredded lettuce between 6 martini or wide-rimmed wine glasses.

Sprinkle over the chopped chives and salad onions, then top with the prawns and a generous dollop of the marie rose sauce.

Dust each portion with paprika and top each glass with the reserved 6 prawns. Place a lemon wedge on the side of each glass and serve immediately.

- 75g mayonnaise
- 35g tomato ketchup
- ½ tsp Tabasco sauce
- 2 tsp dry sherry
- ½ lemon, juiced, plus the other half cut into wedges, to serve
- ½ iceberg lettuce, thinly shredded
- 1½ tbsp chives, chopped
- 3 salad onions, thinly sliced
- 400g cooked king prawns, shelled, plus 6 prawns kept aside, to serve
- ½ tsp sweet smoked paprika, to serve
