Put a few ice cubes in a large wine glass, add mint leaves then fill the rest of the glass with more ice. Squeeze a fresh lime wedge over the ice, add the elderflower cordial and top up with Highland Spring sparkling water.

- 5 fresh mint leaves
- 1 dash Highland Spring sparkling water, to top up
