Arrange the salad leaves in a bowl. Slice the cooked chicken breast into strips. Peel and slice the mango and avocado taking care to avoid the stone. Add the Tabasco sauce to the vinaigrette in a small glass and mix well.

Toss the chicken, mango and avocado through the salad leaves and scatter pine kernels on top. Drizzle the salad dressing over the salad and serve immediately.
