Chicken, Mango and Avocado Salad with a Tangy Green Tabasco Dressing

This tangy jalapeno Tabasco has a subtle and mild flavour that goes perfectly with salads. As the recipe calls for cold cooked chicken, it is ideal for using up that left over roast!

    Arrange the salad leaves in a bowl. Slice the cooked chicken breast into strips. Peel and slice the mango and avocado taking care to avoid the stone. Add the Tabasco sauce to the vinaigrette in a small glass and mix well.

    Toss the chicken, mango and avocado through the salad leaves and scatter pine kernels on top. Drizzle the salad dressing over the salad and serve immediately.

  • 100ml vinaigrette
  • 3 tbsp Tabasco Green sauce
  • 2 oz pine nuts , toasted
