Prepare Ahead
Preheat the oven to 190C/Gas5.

Cook the pasta according to the packet instructions, adding the peas for the last 3 minutes. Drain, reserving 75ml of the cooking water.

Mix the pasta and peas with the smoked mackerel, crème fraiche, horseradish and the reserved cooking water. Mix and then place in a shallow ovenproof dish.

Top with the sliced tomatoes, followed by the breadcrumbs and then sprinkle with the grated cheese.

Bake in the preheated oven for 15 minutes until golden and crisp. Season and serve.

- 300g penne pasta
- 200g frozen petit pois peas
- 150g smoked mackerel , skinned and flaked
- 100g creme fraiche
- 1 tbsp creamed horseradish
- 4 tomatoes, sliced
- 75g wholemeal bread , made into coarse crumbs
- 40g mature cheddar, grated
